Fiddleheads also known as Ostrich Fern are the early spring freshly emerged coiled fern named for looking like the scroll head of a fiddle or violin. Pick just as they are beginning to unfurl picking no more than half per plant to allow enough foliage for the plant to thrive during the growing season. When left on the plant coils unroll into a vase shaped plant. Plant prefers full shade but tolerates a few hours of partial sunlight as long as the soil stays moist. For cooking prep fiddleheads by rinsing and rubbing off any papery brown skin, steam, braise, sauté or roast and serve lightly dressed with a vinaigrette. Perennial hardy in Zones 2-7.
