Fennel Leafy

Foeniculum officinale
This fennel is prized for it's tall feathery foliage, similar to that of dill. It does not produce a bulb, instead it has tall foliage with flat clusters of flowers in late summer. It has the same mild anise, licorice flavor and aromas and can be used in many of the same ways as other Fennel varieties. Harvest by cutting the larger stems at the base of the plant, leave young leaves to grow out. If you are harvesting the seeds, wait until all seed heads have turned brown and separate easily. The stalks, seeds and leaves of this variety can all be used to flavor sauces, soups, and baked goods. It is best when used fresh before flowering, but can be dried and stored in air tight containers.
