Big Jim’ Introduced in the 1970’s at New Mexico State University this giant chili pepper is a cross between a few different types of local chili peppers and a Peruvian chili. These peppers can measure 10-12” and have actually been listed in the Guinness Book of Records for being the largest chili ever grown. Peppers mature to red but are usually used when green. The spicy flavor has a medium heat, a bit milder than the average jalapeno. It’s great stuffed grilled or roasted. The tall green plant has white flowers and can produce 24-36 peppers. Stake or trellis to support plant because of the weight of the many large peppers.
