This popular pepper is excellent for pickling and canning with its thick walled 6 to 8 inch by 2-inch wide banana shaped fruits produced on upright plants. Fruit turns yellow to orange-red at maturity. Mildest when yellow, they have more heat when red. Many people prefer the flavor profile of the yellow peppers, but if you want some heat, the longer you leave it on the plant the hotter it will get. For freshest flavor profile pick immediately before eating. Great to slice into rings to add color and distinctive flavor to nachos, soups, salads, or salsas.
