This spicy hot chili pepper is used to add heat and spice to Southeast Asian cuisine. The 2-3 inch long, ½ to ¾ inch wide peppers begin green and mature to dark red when they are at their hottest. When red, the pepper heat often builds slowly after eating and is potent and lingering. Thai Hot produces an abundant harvest on 2-3 foot tall plants and can produce up to 200 peppers under ideal conditions. Chopping peppers and using seeds will create the hottest and spiciest flavor. Removing seeds and blanching mellows out the heat slightly.
