This unique and easy to grow all-purpose potato has violet-blue flesh that keeps its color when cooked and does not turn grey like other purple varieties. The flavorful round or oblong tubers have thin, smooth, deep violet-blue skin and deep eyes that create a unique look. This variety contains high levels of anthocyanins, a naturally occurring pigment similar to those found in blueberries and is high in antioxidants. Plant 12” apart and as the plant gets taller, hill up the soil around the base of the plant to cover any tubers near the surface. Give the low growing vines more room to spread, foliage gives plant more vigor.
Harvest when the vines start to die back. Brush off dirt but don’t wash as being wet may cause tubers to rot. Air dry in a cool dark place
