June Bearing Honeoye

Chef Jeff Selections, I produce juicy, sweet fruit in June. Use my delicious, fresh fruit in desserts, juices, jams, syrups, snacks or garnishes. I am ideal for containers, hanging baskets and the home garden. For best results, feed with a liquid or slow release fertilizer. Add peat moss and compost to the soil before planting to create a rich, well-drained soil.

 

Old-Fashioned Strawberry Jam

 

2 quarts crushed strawberries
3 Tablespoons fresh lemon juice
6 cups sugar

Add lemon juice and sugar to strawberries, bring slowly to a boil and stir until sugar dissolves. Cook rapidly until thick (about 30 minutes) and stir often to prevent sticking. When thickened, skim off foam with a slotted spoon and ladle into hot, sterilized jars; leave ¼ inch space at top of jar and fasten lid. Process in boiling water for 10 minutes.
