Chia

Salvia hispanica 
Chia is a plant that everyone has heard of but few people have grown it into a mature plant. Chia is categorized as a superfood, it is high in protein, fiber, Omega-3 fatty acids and contains nine amino acids. Leaves can be eaten as micro-greens and are best young, they become bitter as they mature. Spikes of butterfly attracting and mint scented clusters of purple or white flowers form, mature, and bear the nutritious seeds this plant is known for. Seeds can be saved to be eaten or sprouted. At the end of the season harvest flowers after they have dried and when the petals have fallen off. Store the flowers in a paper bag until completely dry, crush the flowers and seed heads to release the seeds.
