Add some zip to your favorite Mexican dishes with the long, jagged, dark green leaves of this plant.  Also known as Mexican Tea the young leaves have a mild flavor and are commonly used to flavor black bean dishes, soups, quesadillas, potatoes, enchiladas, tamales and eggs.  The distinct, flavor of this herb is like pepper with overtones of mint.  Mature leaves added in small quantities add a more pungent flavor.  Add to dishes near the end of cooking for best flavor  Use fresh or dry the leaves for future use.
