Petroselinum crispum
Arat has parsley leaves with super parsley flavor but it’s grown mostly for its 5-8 inch long straight white roots. Grown much like parsnips the young flat leaves sprout above the ground while the root with nutty celery-like flavor develops underground. The roots can be prepared just like other root vegetables and are a great addition to soups and stews.
