Crocus sativus
Saffron is the dried stigmas and stamen of this fall blooming crocus. It produces 2-4 lavender flowers in October and every flower produces 3 filaments. The bulb will multiply underground and produce more flowers each year. Keep an eye on the flowers and harvest the slender red stamens on each flower. Pick the flowers mid-morning on a sunny day when the flower is partially open and the petals are dry. Pick the saffron threads with your fingers or tweezers, don’t squeeze too hard so you don’t break the thread in the middle. Transfer threads to a paper towel to dry completely. Place in a warm spot out of a draft-you don’t want those threads to blow away!
