Hotcha Sriracha Pepper

Bright red, multi-purpose Sriracha  hot sauce is made from red chili peppers, garlic, vinegar, salt, and sugar.  This special Jalapeno variety matures to crimson red to develop red hot heat for home made sriracha.  Red jalapeno are hotter than green with a higher level of capsaicin, the heat range can hit 8000 Scoville units.  Use a little or use a lot of this pepper to give hot sauce the earthy taste and heat level of this pepper you are looking for.

Easy Sriracha Recipe
1 ½ cups chopped peppers
3 or more garlic cloves peeled (adjust to taste)
2 tablespoons brown sugar
2 teaspoons salt
¼ cup white vinegar
Chop Peppers and garlic in food processor until smooth paste add remaining ingredients and process until a smooth sauce.  Add water to mixture if necessary to reach desired consistency.  Pour mixture into clean glass jar, refrigerate.  Strain sauce if desired for smoother texture.
