Georgia Collards

This is an old Southern standard that dates to pre-1880’s. The nutrient rich leaves are large, open blue green, are slightly crumpled, and packed with moisture. The flavor is often described as having a mild cabbage-like taste. Flavors improve and intensify after a light frost. This variety is great sauteed, steamed or blanched in boiling water for 3-4 minutes. It has traditionally used to compliment ham hocks and other pork dishes.  Easy to grow, it tolerates cold and light frost, the heat of summer and even poor soil. For best results feed with a liquid or slow-release fertilizer.
