The tender Hansel Eggplant has a sister in Gretel, a new white eggplant and is just as versatile and delicious. Nearly seedless, this eggplant is perfect for frying or baking. Eggplants appear in clusters of 3 to 6 on plants just 3 feet high and 2½ feet wide. The pure white fruit are sweet with tender skin even if they mature beyond the ideal fruit size of 3 to 4 inches.
