Scarlet Bor works well as both an edible and ornamental plant. The tall finely cut frilled leaves go from deep green to a deep red-purple with cooler temperatures. After frost the leaves turn even darker and taste even sweeter. The tall upright leaves make excellent garnishes, are great added to chopped and added to salads or used in smoothies, Scarlet Kale even looks good in flower beds. Best harvested when leaves are young, 6” or less. Cut the outer leaves first and allow the inner leaves to continue growing. A single serving of red kale contains 150mg of calcium, 15% of the recommended daily dosage.
