Iceberg lettuce is a head lettuce and the most popular lettuce. Tightly formed heads of sweet crispy leaves are green giving way to lighter, sweeter leaves in the center. Heads grow to about 1 foot in diameter. Pick the whole head, Iceberg is used in salads as a garnish and on sandwiches.
