and natural wood smoke taste of homegrown
Chipotles. Keep peppers on the bush as long as
possible, pick when deep red and they have lost most
of their moisture. Cold smoke 8-16 hours following smoker instructions. A covered grill can also be used with a small charcoal fire in a corner covered with water soaked wood chips. Lay peppers on opposite side of grill so they smoke and don't cook. Check often to make sure the coals are still glowing and to add chips if needed. Peppers can finish drying in a food dehydrator or oven (200 degrees or lower) overnight. Peppers should end up black, dry, leathery and brittle to have intense flavor and heat.
