Pickled, this is the pepper that completes a Chicago style hot dog. The slender, 1½ to 2" long by ½" wide peppers resemble a Tabasco pepper but are slightly larger. Pick the medium hot peppers from the sturdy plants just before they turn red and pickle using your favorite recipe or this easy recipe. 2 lbs Sport Peppers, 6 cups vinegar, 2 cups water. Bring vinegar and water to simmer in a large pot, cut a slash in peppers, add to simmering liquid and press down to fill them with juice. When peppers become slightly limp, remove from liquid and place in jars. Flll jars with liquid mix to within ½" of top. Tap jars on the counter to remove air bubbles. Seal with two piece canning lids. Place jars in the rack of a large canning pot, and fill with enough water to cover the jars completely. Process in boiling water bath for 10 to 15 minutes. Remove jars, let cool and store.
