Rhubarb is a hardy perennial grown primarily for its fleshy stalks which have a tart tangy flavor. It is high in vitamin C and Potassium, very versatile and excellent in pies, sauces and jams. The red leaf stalks can reach 22 inches long. Harvest when stems are plump and bright red and leaves are a mature size. Select the tallest stalks pulling them from the plants near the base and gently pull downwards and outwards with a twisting movement. Rhubarb does best in loose, well-drained soil in a sunny location. Do not use the leaves or roots. Hardy to zone 3-8.
