The delicious, sugary, creamy sweet potato-like taste of this squash has given Delicata its nickname of Sweet Potato Squash. The golden orange fine textured flesh has a nutty, sweet flavor and is easy to prepare. Slice the squash length wise, remove seeds and steam or bake right in rind. Once cooked, the cream colored, green striped, rind is edible. The skin is tough enough to protect this winter squash it so it can be stored for months throughout the winter.
Harvest the 1-2 pound, 3" diameter, 7-9" oblong fruit when the stem of the squash is completely dry and the rind does not dent when tested with a fingernail.
